About us:

Ferndale Gardens has been a provider of superior aged care in the heart of the St George area for over 40 years. We have a team of passionate staff to provide the best care to our residents.

We are looking for an experienced Chef to join our team and help us fulfil our aim to maximise the quality of life for our residents and their families.

Location: Mortdale - NSW 2223

Salary range: $55,000 - $65,000 per annum

Role: Full-time

Key responsibilities include, but are not limited to:

  • Plan daily food production in the kitchen along with Head Chef.
  • Prepare and cook food as per the requirements of residents and strictly adhere to dietary requirements (allergies, texture modified, purees, etc).
  • Plan menus including any special requests or dietary requirements of the residents.
  • Sound stock control and replenishment of stock in the kitchen.
  • Ensure the Food Services Staff are effectively managed.
  • Maintain and monitor compliance to the Food Safety Program and hygiene regulations.
  • Report hygiene related issues to the Head Chef
  • Train other kitchen staff as and when required.
  • Highlight any issues with regards to food preparation to the management.
  • Maintain clean kitchen environment.
  • Assist Head Chef to estimate cost related to raw materials and labour, if required
  • Examine food at all stages to ensure quality.
  • Perform other tasks in the kitchen as required.

Requirements and Qualifications:

  • Minimum Certificate IV in Commercial Cookery or a higher qualification.
  • Foods Safety Supervisors Certificate or willingness to obtain the same.
  • A minimum of 3 years of work experience as a Chef.
  • Previous experience in executing all aspects of kitchen operations and food preparation in Aged Care/Health Care is highly desirable.
  • You have or willing to undertake Criminal Record Check.

Skills and Competencies:

  • Commitment to working positively within a team environment.
  • Knowledge of workplace Health & Safety regulations.
  • Experience in fulfilling special dietary requirements.
  • Excellent food preparation and presentation skills.
  • Excellent communication and time management skills.
  • Has duty of care.

Australian citizens and permanent residents are preferred.
